
SALSA
Store-bought salsa never stood a chance. Try this fresh and simple salsa recipe and you'll never go back.

Ingredients + Preparation
- Large tomatoes (Four, eyes removed and quartered)
- Small sweet onion (One, skin removed and quartered)
- Garlic (One clove, peeled)
- Coriander (1 cup)
- Lime (One, for juicing)
- Vinegar (2 tbsp)
- Jalapeño (Half, seeds removed)
- Something spicy: Cayenne, chili powder or tabasco (1-2 tsp)
- Salt (2 tbsp)
Instructions
1. In the blender, combine the tomato, onion, garlic, coriander, lime and vinegar. Pulse a few times until only small pieces of tomato and onion are visible.
2. Add salt and spice of your choosing. Taste and adjust as needed.
3. Let sit in the fridge for at least two hours for best results.

Tips + Tricks
- For best results, delayer the onion so that the pieces are not clumped together when you blend with the other ingredients. This will help it evenly mix in the salsa.
- If you don't have a blender this can all be done with a knife & cutting board. If you go this route, try to cut the tomato, onion, garlic and coriander as fine as possible (to avoid oversized chunks).

This healthy and tasty side-dish is high in vitamin C which is good for you for many reasons (too many to list!) and fiber, which is great for digestion. A lot of store bought salsas have added sugar and preservatives, and aren't nearly as fresh as home-made ones so this is an all around tastier and healthier option!
